Z targetting question(s) Possible spoilers inside

I don't remember back to the Z targetting primer so I think I'm doing it wrong.

I had a very very hard time killing the birds, putting out the fires, etc on the escort wagon quest. What I was doing was holding down the B button for the arrow and then moving the cursor near the bird. When it turned yellow, I was pressing the Z button and releasing the B button at the same time.

I think I'm doing it wrong though. I'm at work so I can't try this out, but it sounds like all I have to do is hold down the Z button and then press B when it locks on and turns yellow. Is this correct? I'm going to feel like a feep if this is correct because it would make the game 100% easier than it currently seems. It was also a pita to kill the water boss doing it like I was doing because it took me (no kidding) 40 mins pressing the B button, targetting the eye with the hookshot, and then releasing when the Z target turned yellow as I moused over it...

When it turns yellow, just press the Z button once, and it will lock on. Than just let go of the b button afterwards, no need to hold Z.

When the yellow arrow pointing down appears over your enemy, pressing z once will lock on.(also turn from yellow to red) The escort part is hard just target the birds, kill them with the bow and switch back to the boomerang and lock on the wagon and put the fire out, if needed. And the Mounted boars, target/flick the wiimote as needed.
